- 1/2 a medium red onion, thinly sliced
- 4 oz feta cheese, crumbled or cubed (about 1 cup)
- 2 sprigs mint, leaves roughly chopped or torn
Dressing:
- juice from 1 lime (about 3 tablespoons)
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
To Serve:
- 4 cups baby arugula
- 1/4 cup roasted, salted pistachios (shelled)
Instructions
- Prepare the Salad: Place watermelon, watermelon rind, red onion, feta, and mint leaves in a large mixing bowl.
