This Balsamic Chicken recipe is a delightful combination of sweet and savory flavors, featuring tender chicken breasts marinated in a balsamic reduction, topped with melted cheese, and served with a colorful array of vegetables.

Ingredients

Units Scale

Main Ingredients:

  • 1/2 cup balsamic vinegar
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried marjoram
  • 1/4 teaspoon fresh ground black pepper
  • 4 boneless skinless chicken breasts (68 ounces each)

Additional Ingredients:

  • 1 1/2 cups grape tomatoes, halved
  • 8 ounces fresh asparagus spears, chopped
  • 1 zucchini, chopped
  • 1/2 cup shredded provolone
  • 1 cup shredded mozzarella
  • 1/4 cup fresh basil ribbons

Instructions

  1. Balsamic Reduction: Combine balsamic vinegar and honey in a small pan over medium heat. Simmer until reduced by half, then let it cool.
  2. Marinating Chicken: Mix olive oil, garlic, marjoram, and black pepper. Brush over chicken in a baking dish. Pour cooled balsamic reduction around the chicken and marinate for 30 minutes.
  3. Baking: Add tomatoes, asparagus, and zucchini to the dish. Bake at 350 degrees for 20-25 minutes until the chicken reaches 165 degrees internally.
  4. Cheese Topping: Sprinkle with provolone and mozzarella. Broil for 2-3 minutes until melted and browned. Top with basil ribbons before serving.

Notes

  • Chicken is done at 165 degrees internal temperature.
  • Skinless chicken thighs can be used but adjust cooking time.
  • Watch broiler closely when melting cheese.
  • Optional: Reduce balsamic vinegar for a thicker sauce.
  • Store leftovers in the fridge for 3 days or freeze for up to 3 months.
