Potato Mixture:
- 3 lb Russet Potatoes, thinly sliced

- 4 Garlic Cloves, minced

- 1 tsp Pepper
- 1 tsp Paprika

- 3 tbsp Oil
Sausage and Vegetable Mixture:
- 2 lbs Kielbasa Sausage, cut into 1/2-inch chunks
- 2 Medium Zucchinis, cut into 1/2-inch chunks
- 1 Red Bell Pepper, cut into 1/2-inch chunks
- 1/2 cup Italian Dressing
Instructions
- Prepare Potato Mixture: In a large mixing bowl, combine thinly sliced potatoes, chopped onion, minced garlic, salt, pepper, oil, parsley, and paprika.
- Prepare Sausage and Vegetable Mixture: In another mixing bowl, combine kielbasa sausage, zucchinis, bell pepper, and Italian dressing.
- Cook on Griddle: Heat a griddle to medium-high heat. Add the potato mixture and flatten it into almost a single layer. Cook for 5 minutes, then flip and cook for another 5 minutes. Add the sausage mixture, combine with the potatoes, and spread out into a mostly single layer. Cook for 5 minutes on each side.
- Serve: Remove from the griddle and let sit for a few minutes before serving. Garnish with your favorite hot sauce or a fried egg.
