For the Bowls:

  • 2-3 medium potatoes
  • 2 tablespoons olive oil, divided
  • 500 grams lean beef mince
  • Lettuce, shredded
  • Cheese, dairy-free or regular, as preferred
  • Pickle slices

For the Burger Sauce:

  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard, Dijon or yellow
  • 1 teaspoon pickle juice from the jar of pickles
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

Instructions

  1. Prepare Spice Mix: In a small bowl, combine the smoked paprika, garlic powder, onion powder, dried oregano or mixed herbs, salt, and black pepper. Mix well and set aside for later use.
  2. Prepare Potatoes: Cut the medium potatoes into chip shapes. Toss them in a bowl with 1 tablespoon of olive oil and half of the prepared spice mix to coat evenly. Bake in the oven or air fry until the potatoes are crispy and golden brown.
  3. Cook Beef Mince: Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the lean beef mince and brown it, breaking it apart as it cooks. Sprinkle in the remaining spice mix and continue cooking until the mince darkens slightly and most moisture evaporates.
  4. Make Burger Sauce: In a small bowl, whisk together the mayonnaise, ketchup, mustard, pickle juice, garlic powder, and smoked paprika until well combined. Set aside.
  5. Assemble Bowls: Divide the crispy seasoned potatoes among serving bowls. Top with shredded lettuce, cooked beef mince, your choice of cheese, and pickle slices. Drizzle generously with the prepared burger sauce before serving.
