Garlic Butter:
- 1 garlic head
- Sprinkle of salt
- 30 grams olive oil
- 50 grams butter
- 1 tablespoon fresh parsley
Dough:
- 90 grams warm milk
- 7 grams active dry yeast
- 25 grams honey
- 200 grams all-purpose flour
- 50 grams bread flour
- 20 grams milk powder (optional)
- 25 grams butter
- 2 egg yolks
- 1 1/2 teaspoon salt
- 1 tablespoon sugar
Filling:
- 200 grams mozzarella cheese
- Garlic butter we made previously
Egg Wash:
- 1 egg
Instructions
- Roast garlic: In a ramekin, place one whole garlic head, drizzle with olive oil, sprinkle with salt, cover with foil, and roast at 160°C (320°F) for 2 hours.
- Garlic butter: Mix roasted garlic with softened butter, parsley, and garlic oil; set aside.
- Yeast mixture: Combine warm milk, yeast, and honey; let proof for 10 minutes.
- Dough: Mix flours, sugar, milk powder, butter, salt, egg yolks, and yeast mixture; knead for 15-20 minutes.
- Proof dough: Let dough rise for 1 hour 30 minutes until doubled.
- Roll out dough: Spread garlic butter on dough, add mozzarella, roll into a log.
- Cut dough: Divide into 6 portions.
- Second proof: Let rolls rise for 30 minutes.
- Bake: Brush with egg wash, bake at 175°C (350°F) for 20-25 minutes.
- Decorate: Brush with garlic butter, sprinkle parsley.
