Description

A hearty and cheesy ground beef and potatoes skillet dish that combines flavorful seasoned beef, tender potatoes, and melted cheese, topped with fresh herbs for a satisfying meal.

Ingredients

Units Scale

Potato Mixture:

  • 1 tablespoon oil
  • 1 1/2 lbs potatoes (any kind), cubed
  • 1/2 medium onion, finely diced
  • 1/2 green bell pepper, finely diced

Beef Mixture:

  • 1 lb lean ground beef
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons seasoning salt
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes

Sauce and Toppings:

  • 3/4 cup low sodium beef or chicken broth
  • 1/2 cup tomato sauce
  • 1/4 cup cream
  • 1 cup shredded mozzarella or cheddar cheese

Garnish:

  • Fresh chopped parsley or green onions

Instructions

  1. Prepare Potato Mixture: Heat the oil in a large skillet over medium heat. Add the cubed potatoes and cook, stirring occasionally, until they are golden brown and slightly softened, about 8-10 minutes.
  2. Cook Vegetables and Beef: Add the diced onion and green bell pepper to the skillet with potatoes. Cook for 3-4 minutes until the vegetables are tender. Push the vegetables to the side, then add the ground beef to the skillet and cook until browned, breaking it apart with a spoon.
  3. Add Flavors: Mix in the tomato paste, minced garlic, seasoning salt, Italian seasoning, ground mustard, black pepper, and red pepper flakes. Cook for another 2 minutes to develop the flavors.
  4. Add Sauces: Pour in the broth, tomato sauce, and cream. Stir everything together, then reduce heat to low. Cover and simmer until potatoes are tender, about 10-12 minutes.
  5. Melt Cheese and Serve: Once potatoes are cooked, sprinkle the shredded cheese evenly over the top. Cover the skillet and cook for 2-3 minutes until the cheese melts. Garnish with chopped parsley or green onions before serving.

Notes

  • Potatoes: Use red-skinned or Yukon gold for better flavor and texture.
  • Cooking Tip: To speed up prep, pre-cook potatoes in the microwave for 3-4 minutes before adding to the skillet.
  • Variations: Swap ground beef for turkey or chicken, or add vegetables like mushrooms or peas for extra nutrition.
