For the spiced chicken:

- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1 clove garlic, grated
- 3/4 teaspoon black pepper
- 1 to 3 tablespoons water
- Salt, to taste
- 1 teaspoon granulated sugar (optional)
For the rice:
- 2 tablespoons unsalted butter
- 4 whole green cardamom pods
- 2 shallots, diced
- 1/2 teaspoon ground turmeric
- 2 cups long-grain basmati rice
- 3 cups chicken stock
- 2 teaspoons Diamond-Crystal Kosher Salt
For serving:
- Diced tomato
- Shredded lettuce
- Hot sauce (harissa or Sriracha)
- Warm pita
Instructions
- Marinate the chicken: In a bowl, combine lemon juice, oil, garlic, salt, oregano, coriander, allspice, cumin, and black pepper. Add chicken, coat, and refrigerate for 1 to 4 hours.
- Soak the rice: Rinse rice, then soak in water for at least 30 minutes.
- Make the white sauce: Whisk together yogurt, mayonnaise, lemon juice, sugar, garlic, and pepper. Adjust for salt.
- Cook the rice: Saute shallots, turmeric, add rice, stock, and salt. Cook covered for 20 minutes.
- Cook the chicken thighs: Brown chicken in oil until fully cooked.
- Assemble: Serve rice topped with chicken, vegetables, white sauce, and hot sauce. Serve with warm pita.
