  • 1 1/2 tablespoons olive oil
  • 1 1/2 cups diced red onions
  • 2 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1 tablespoon honey or sugar
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1 teaspoon dried oregano

For the pasta:

  • 8 ounces penne pasta
  • 1 1/2 tablespoons olive oil
  • 1 pound chicken sausage, cut into bite-sized pieces
  • 4 to 6 cups baby spinach
  • 1 1/2 cups shredded mozzarella cheese
  • Chopped parsley, to garnish

Instructions

  1. Make the marinara sauce (or substitute store-bought sauce): Heat olive oil in a large oven-safe sauté pan. Cook onions and garlic, then add crushed tomatoes, honey, parsley, basil, and oregano. Simmer and season with salt.
  2. Cook the pasta: Boil water, add pasta, cook, drain, and set aside.
  3. Make the sausage and spinach sauce: Cook sausage in a skillet, add pasta sauce, and wilt spinach.
  4. Bake the pasta: Combine pasta with sauce, top with cheese, and bake until bubbly and browned.
