- 1 Tbsp low sodium soy sauce
- 1 tsp onion powder
- 1/2 tsp red pepper flakes
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1 tsp fresh or dried thyme
- 1/2 cup freshly grated Parmesan cheese
- 2 cups baby spinach leaves
Instructions
- Cook Chicken Sausage: Heat olive oil in a skillet, brown the chicken sausage slices for 6-7 minutes. Add minced garlic and sauté briefly.
- Add Orzo: Toast dry orzo in the skillet with sausage and garlic. Pour in chicken broth and add coconut milk, soy sauce, seasonings, and thyme.
- Cook Orzo: Bring to a boil, then simmer covered for 10-12 minutes, stirring occasionally until orzo is tender.
