Chicken:
- 2 chicken breasts cut in half lengthwise
- Salt & pepper to taste
- 1/2 teaspoon garlic powder
Sauce:
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 tablespoon flour
- 3 cloves garlic, minced
- 1/2 cup chicken broth or dry white wine
- 1 cup heavy/whipping cream
- 1/2 cup freshly grated parmesan cheese
- 1 tablespoon fresh parsley, chopped
Instructions
- Cut the chicken: Cut the chicken in half lengthwise and season generously with salt, pepper, and garlic powder.
- Sear the chicken: Cook the chicken in a skillet until golden brown and cooked through. Set aside.
- Make the sauce: In the same skillet, make a roux with flour and garlic, then whisk in broth, cream, and parmesan until thickened.
- Combine and serve: Return the chicken to the skillet, coat with sauce, and garnish with parsley before serving.
