Spinach
- 1 tablespoon olive oil
- 8 oz spinach
- salt and pepper
Gnocchi
- 16 oz potato gnocchi
- 1/2 cup chicken broth
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1/2 teaspoon Italian seasoning or Herbs de Provence
- 1/2 teaspoon smoked paprika or more
- 1/4 teaspoon salt, to taste
- coarsely ground black pepper, to taste
- red pepper flakes, to taste
Instructions
- Cook spinach: Heat olive oil in a skillet, cook seasoned spinach until wilted, about 5 minutes. Remove spinach to a plate.
- Make the creamy sauce and cook gnocchi: In the same skillet, add gnocchi, chicken broth, heavy cream, garlic, Italian seasoning, smoked paprika, and salt. Bring to a boil, cover, and cook for 5 minutes. Add back spinach, stir, and cook for a couple of minutes. Adjust seasoning with salt, pepper, red pepper flakes, and smoked paprika.
