Spinach

  • 1 tablespoon olive oil
  • 8 oz spinach
  • salt and pepper

Gnocchi

  • 16 oz potato gnocchi
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 teaspoon Italian seasoning or Herbs de Provence
  • 1/2 teaspoon smoked paprika or more
  • 1/4 teaspoon salt, to taste
  • coarsely ground black pepper, to taste
  • red pepper flakes, to taste

Instructions

  1. Cook spinach: Heat olive oil in a skillet, cook seasoned spinach until wilted, about 5 minutes. Remove spinach to a plate.
  2. Make the creamy sauce and cook gnocchi: In the same skillet, add gnocchi, chicken broth, heavy cream, garlic, Italian seasoning, smoked paprika, and salt. Bring to a boil, cover, and cook for 5 minutes. Add back spinach, stir, and cook for a couple of minutes. Adjust seasoning with salt, pepper, red pepper flakes, and smoked paprika.
