Description

These Crispy Beef Tacos are baked, not fried, making them a healthier alternative without sacrificing flavor. Filled with seasoned ground beef, melty cheese, and topped with a zesty chipotle crema, these tacos are sure to be a family favorite!


Ingredients

For the tacos

  • Oil (canola, vegetable, or olive oil)
  • 1 lb. ground beef (85% lean/15% fat or 90/10)
  • 2 Tbsp. taco seasoning
  • 1/2 cup water
  • 3 cloves garlic, minced
  • 1 lime, juiced
  • 1, 4 oz. can diced green chiles
  • Salt and pepper, to taste
  • 8 oz. colby jack cheese, shredded, divided
  • 810, 6-inch white or yellow corn tortillas

Chipotle crema

  • 1/2 cup – 3/4 cup Mexican crema or sour cream
  • 2 chipotle peppers in adobo sauce
  • 1 tsp. honey or sugar
  • 1/2 lime, juiced
  • 1 clove garlic
  • Salt, to taste

For serving

  • Sour cream
  • Shredded lettuce
  • Fresh cilantro
  • Pico de gallo
  • Guacamole
  • Pickled red onions

Instructions

  1. Preheat the oven: Preheat the oven to 425°F and lightly oil or spray 2 baking sheets. Set aside.
  2. Cook the beef: Cook ground beef in a skillet, then add taco seasoning, water, garlic, lime juice, diced green chiles, salt, and pepper. Stir in shredded cheese.
  3. Prepare the tortillas: Microwave tortillas wrapped in a damp paper towel to make them pliable.
  4. Fill and bake: Spread beef mixture on tortillas, top with cheese, fold, brush with oil, and bake for 15-20 minutes.
  5. Make the chipotle crema: Blend Mexican crema or sour cream with chipotle peppers, honey, lime juice, garlic, and salt until smooth.
  6. Serve: Serve tacos with desired toppings and chipotle crema.

Notes

  • Store leftovers in the fridge for up to 3 days.
  • Reheat in the oven for 10 minutes or microwave for about 1 minute.
