Description

For the Hot Honey

  • 1/3 cup / 110g Honey
  • 1 1/2 tsp Hot Sauce (such as Frank’s or Cholula)
  • 3/4 tsp Chilli Flakes

For the Chicken

  • 2x 250g/9oz Chicken Breasts
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Cayenne Pepper
  • 35g / 1/4 cup Plain Flour
  • 2 Eggs, beaten
  • 65g / 1 cup Panko Breadcrumbs
  • Veg Oil, as needed (6-8 tbsp)

For the Topping

  • 200g / 7oz Feta, crumbled

Instructions

  1. Prepare Hot Honey: Combine honey, hot sauce, and chilli flakes in a microwave-safe bowl and microwave for about 20 seconds until warm. Stir well, then let it cool. Alternatively, simmer gently in a small pot on the stove, then remove from heat and cool.
  2. Prepare Chicken: Slice each chicken breast horizontally through the center to create four even fillets. In a small bowl, mix paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper.
  3. Bread the Chicken: Set up three shallow dishes: one with flour mixed with half of the seasoning, one with beaten eggs, and one with Panko combined with the remaining seasoning. Dip each chicken piece first in the flour mixture, then in egg, then coat thoroughly with the breadcrumb mixture, placing on a tray as they are coated.
  4. Cook Chicken: Heat oil (6-8 tbsp) in a large skillet over medium-high heat. Once hot, carefully place the breaded chicken in the pan (fry in batches if necessary). Fry for about 3-4 minutes per side until golden and crispy and internal temperature reaches 165°F/74°C. Drain on a wire rack.
  5. Finish with Feta: Top each piece of chicken with crumbled feta. Place under the broiler on high for 2-3 minutes until feta is melted and lightly golden.
  6. Serve: Drizzle hot honey generously over the crispy chicken and feta before serving. Pair with your choice of side dishes like greens or potatoes and enjoy.

  • Hot Honey – You can infuse honey with chili flakes and hot sauce in advance and store in the fridge for easy use.
  • Baking Option – Bake breadcrumb-coated chicken at 180°C/350°F for 5 mins until lightly golden, then proceed to bake at 220°C/430°F for 10 mins and 8-10 mins on flip side for crispiness.
  • Serving suggestions include serving with arugula or crispy potato wedges for a complete meal.
  • Adjust spice level by adding more or less chili flakes or hot sauce to the honey.
