Spice Mix:
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons paprika
- 1 teaspoon ground coriander
- 1 teaspoon salt

Chicken & Chickpea Skillet:
- 1 pound boneless, skinless chicken breasts, trimmed and cut into 1-inch pieces
- 2 tablespoons extra-virgin olive oil, divided
- 1 large yellow onion, chopped
- 2 tablespoons no-salt-added tomato paste
- 4 cloves garlic, minced
- 1 (15-ounce) can no-salt-added chickpeas, drained, with 1/2 cup liquid reserved
- 1 (14-ounce) can no-salt-added diced tomatoes
- 1 tablespoon lemon juice
- 1/4 cup chopped fresh flat-leaf parsley
Instructions
- Prepare Spice Mix: Combine cumin, paprika, coriander, salt, and pepper in a bowl. Coat chicken pieces with a portion of the spice mix.
- Cook Chicken: Brown the chicken in a skillet, then set aside.
- Sauté Onion & Spices: Cook onion, tomato paste, garlic, and remaining spice mix until the onion softens.
- Add Remaining Ingredients: Add chickpeas, tomatoes, reserved chickpea liquid, and chicken. Simmer until chicken is cooked through.
- Finish & Serve: Stir in lemon juice, garnish with parsley, and serve.
