Description

This Cumin Chicken & Chickpea Skillet is a flavorful and easy one-pan dish that combines tender chicken with chickpeas and aromatic spices. It’s a satisfying meal that’s perfect for busy weeknights.

Spice Mix:

  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper

Chicken & Chickpea Skillet:

  • 1 pound boneless, skinless chicken breasts, trimmed and cut into 1-inch pieces
  • 2 tablespoons extra-virgin olive oil, divided
  • 1 large yellow onion, chopped
  • 2 tablespoons no-salt-added tomato paste
  • 4 cloves garlic, minced
  • 1 (15-ounce) can no-salt-added chickpeas, drained, with 1/2 cup liquid reserved
  • 1 (14-ounce) can no-salt-added diced tomatoes
  • 1 tablespoon lemon juice
  • 1/4 cup chopped fresh flat-leaf parsley

Instructions

  1. Prepare Spice Mix: Combine cumin, paprika, coriander, salt, and pepper in a bowl. Coat chicken pieces with a portion of the spice mix.
  2. Cook Chicken: Brown the chicken in a skillet, then set aside.
  3. Sauté Onion & Spices: Cook onion, tomato paste, garlic, and remaining spice mix until the onion softens.
  4. Add Remaining Ingredients: Add chickpeas, tomatoes, reserved chickpea liquid, and chicken. Simmer until chicken is cooked through.
  5. Finish & Serve: Stir in lemon juice, garnish with parsley, and serve.
