Description

This Easy Romesco Sauce is a quick and flavorful sauce that pairs well with a variety of dishes. Made with roasted red peppers, almonds, sun-dried tomatoes, and a blend of spices, this versatile sauce adds a burst of Mediterranean flavor to any meal.


Ingredients

For the Romesco Sauce:

  • One 16-ounce jar of roasted red peppers, drained
  • 1/2 cup raw or roasted almonds (unsalted)
  • 1/4 cup oil-packed sun-dried tomatoes, rinsed and drained
  • 2 medium-to-large cloves garlic, peeled and quartered
  • 1 tablespoon sherry vinegar or red wine vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon fine sea salt, to taste
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup extra-virgin olive oil

Instructions

  1. In a blender or food processor, combine all ingredients except the olive oil. Blend until mostly smooth.
  2. While blending, slowly drizzle in the olive oil until desired consistency is reached.
  3. Taste and adjust seasoning as needed. Serve immediately or store in the refrigerator.

Notes

  • Make it nut free: Omit almonds or substitute with pine nuts if tolerated.
  • Make it tomato free: Sun-dried tomatoes can be omitted if needed.
