This Easy Romesco Sauce is a quick and flavorful sauce that pairs well with a variety of dishes. Made with roasted red peppers, almonds, sun-dried tomatoes, and a blend of spices, this versatile sauce adds a burst of Mediterranean flavor to any meal.

For the Romesco Sauce:
- One 16-ounce jar of roasted red peppers, drained
- 1/2 cup raw or roasted almonds (unsalted)
- 1/4 cup oil-packed sun-dried tomatoes, rinsed and drained
- 2 medium-to-large cloves garlic, peeled and quartered
- 1 tablespoon sherry vinegar or red wine vinegar
- 1 teaspoon smoked paprika
- 1/2 teaspoon fine sea salt, to taste
- 1/4 teaspoon cayenne pepper
- 1/2 cup extra-virgin olive oil
Instructions
- In a blender or food processor, combine all ingredients except the olive oil. Blend until mostly smooth.
- While blending, slowly drizzle in the olive oil until desired consistency is reached.
- Taste and adjust seasoning as needed. Serve immediately or store in the refrigerator.
Notes
- Make it nut free: Omit almonds or substitute with pine nuts if tolerated.
- Make it tomato free: Sun-dried tomatoes can be omitted if needed.
