Description

This easy sweet chilli chicken recipe is a Chinese-inspired fakeaway dish that’s quick to make and bursting with flavor. Tender diced chicken is seasoned, fried until golden, then coated in a sticky sweet chilli sauce for a delicious meal.

Ingredients:

  • 600 g chicken breast, roughly diced (£4.32)
  • 60 ml (4 tbsp) sweet chilli sauce (£1.20/2= £0.60)
  • 1 tbsp fresh ginger, finely grated (£0.72=£0.36)
  • Fresh chives (£0.60/2= £0.30)
  • Cupboard Essentials:

  • 1 tsp garlic granules
  • 1 tsp onion granules
  • 3 tbsp cornflour
  • 1/21 tsp cayenne pepper
  • 1 tbsp smoked paprika
  • 2 tbsp olive oil
  • 1/2 tbsp rice vinegar
  • 200 ml chicken stock
  • Salt

Instructions

  1. Coat the Chicken: Mix diced chicken with garlic and onion granules, 2 tbsp cornflour, cayenne pepper, and smoked paprika. Refrigerate if time allows.
  2. Fry the Chicken: Preheat oil in a pan, add chicken, fry until colored. Stir in ginger and salt.
  3. Add Sauces: Pour in sweet chilli sauce, chicken stock, and cornflour slurry. Cook until thickened. Stir in rice vinegar.
  4. Finish and Serve: Top with chives and black pepper. Enjoy!
