Ingredients:

  • 600 g (18oz) green beans extra thin
  • 1 shallot finely chopped
  • 1 white peach sliced finely
  • 1 tablespoon almonds blanched, unsalted
  • 20 fresh basil leaves finely chopped or torn
  • 3 tablespoon olive oil extra virgin
  • 1/4 teaspoon salt (fleur de sel) or Maldon flakes, Celtic sea salt

Instructions

  1. Prepare the Green Beans: Top and tail the green beans and cook in simmering unsalted water for 5-10 minutes until al dente. Add a pinch of bicarbonate of soda to retain color and texture. Drain and cool.
  2. Sauté Shallot and Almonds: In a pan, sauté chopped shallot in olive oil until golden. Add almonds and cook for 2 minutes. Toss in the green beans.
  3. Finish the Dish: Remove from heat, add basil, salt, and pepper. Transfer to a dish and top with sliced peach. Serve warm or cold.
