Ingredients:
- 600 g (18oz) green beans extra thin
- 1 shallot finely chopped
- 1 white peach sliced finely
- 1 tablespoon almonds blanched, unsalted
- 20 fresh basil leaves finely chopped or torn
- 3 tablespoon olive oil extra virgin
- 1/4 teaspoon salt (fleur de sel) or Maldon flakes, Celtic sea salt
Instructions
- Prepare the Green Beans: Top and tail the green beans and cook in simmering unsalted water for 5-10 minutes until al dente. Add a pinch of bicarbonate of soda to retain color and texture. Drain and cool.
- Sauté Shallot and Almonds: In a pan, sauté chopped shallot in olive oil until golden. Add almonds and cook for 2 minutes. Toss in the green beans.
- Finish the Dish: Remove from heat, add basil, salt, and pepper. Transfer to a dish and top with sliced peach. Serve warm or cold.
