  • Salt & pepper, for seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 cup chopped onion, about 1 small onion
  • 2 cloves of garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 1/2 teaspoons cornstarch
  • 2 teaspoons fresh thyme, finely chopped, or 3/4 teaspoon dried thyme or poultry seasoning

For the green beans:

  • 1 lb fresh green beans
  • 2 tablespoons butter
  • 4 cloves of garlic, minced
  • 2 teaspoons Italian seasoning
  • Pinch red pepper flakes, optional
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup water
  • 1 lemon, divided

Instructions

  1. Prepare the Chicken: Butterfly the chicken breasts, season with salt and pepper, then cook in a pan until golden.
  2. Make the Garlic Sauce: Sauté onions, garlic, add chicken broth, thyme, and simmer.
  3. Cook the Green Beans: Sauté garlic, add green beans, seasonings, water, and simmer.
  4. Combine and Serve: Thicken sauce, add chicken back, simmer briefly, then serve with green beans and lemon wedges.
