Description

A delightful and versatile Grilled Zucchini, Halloumi, Pea Salad with a refreshing mint, Dijon, and lemon dressing. This salad is perfect as a side for grilled meats or as a light standalone meal.


Ingredients

Salad Dressing:

  • 40 ml olive oil
  • 40 ml lemon juice
  • 20 gm Dijon mustard
  • 1/2 tsp salt flakes
  • 4 grinds black pepper

Grilled Bits:

  • 700 gm zucchini
  • 250 gm baby peas
  • 200 gm Halloumi cheese
  • 1 bunch mint

Instructions

  1. Salad Dressing: In a small bowl, mix olive oil, lemon juice, Dijon, salt, pepper. Set aside.
  2. Grilled Bits: Cut zucchini and Halloumi. Toss with dressing. Grill zucchini and Halloumi until lightly charred. Cook peas and mix all with dressing, mint, salt, and pepper. Serve.

  • This salad pairs well with grilled meats or pasta dishes.
  • Add rocket or spinach for variation.
  • Optionally, top with finely sliced green onions or Dukkah for extra flavor.
