These Ground Beef Mongolian Noodles are a flavorful and satisfying dish that combines tender noodles with savory ground beef in a delicious sauce infused with ginger, garlic, and Asian seasonings.

  • 1 pound lean ground beef
  • 4 teaspoons fresh ginger, minced
  • 6 cloves garlic, minced

For the Sauce:

  • 1/2 cup brown sugar (can reduce to 1/3 or 1/4 cup)
  • 1/2 cup beef broth
  • 1/2 cup low-sodium soy sauce
  • 4 tablespoons hoisin sauce
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)

For the Noodles:

  • 10 ounces noodles (linguine, fettuccine, or spaghetti)
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 4 medium green onions, sliced

Instructions

  1. Brown the Ground Beef: In a large skillet with high sides, brown the ground beef on the stovetop. Add the ginger and garlic during the last 2 minutes of cooking, breaking up the meat as it cooks.
  2. Cook the Noodles: While the beef is cooking, prepare the noodles according to package instructions. Drain well.
  3. Make the Sauce: Drain the beef and return it to the skillet. Add soy sauce, beef broth, brown sugar, red pepper flakes, black pepper, and hoisin sauce. Stir to combine.
  4. Thicken the Sauce: Dissolve cornstarch in water and add to the beef mixture. Bring to a low boil until slightly thickened.
