Description

Tender and flavorful Indonesian Grilled Sambal Chicken, marinated in a harmonious blend of aromatic spices and chili paste, then grilled to perfection. This dish offers a spicy kick with a touch of sweetness that will tantalize your taste buds.


Ingredients

Chicken Marinade:

  • 22 1/2 lbs Chicken (boneless, skinless chicken thighs)
  • 4 garlic cloves
  • 1 1/2 tablespoon sliced fresh ginger
  • 1/4 cup sriracha sauce
  • 1/4 cup fish sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice wine vinegar
  • 2 tablespoons olive oil or peanut oil
  • 1 tablespoon soy sauce or Bragg’s liquid Amino
  • 1/4 cup Sambal Olek (garlic chili paste) plus 1 – 2 tablespoons more for extra spicy

Garnish:

  • Crushed roasted Peanuts
  • Fresh mint leaves
  • Sliced scallions
  • Thai Crunch Salad or Asian Slaw (to serve)

Additional:

  • 810 Pre-soaked Skewers (optional)

Instructions

  1. Cut chicken into bite-size pieces or leave whole. Place in a zip lock bag or bowl.
  2. Blend garlic, ginger, sriracha, fish sauce, brown sugar, vinegar, oil, and soy sauce until smooth. Stir in Sambal Olek. Pour over chicken and marinate.
  3. Preheat grill to medium-high.
  4. Skewer chicken or leave whole.
  5. Simmer leftover marinade to thicken for basting.
  6. Grill chicken, basting with thickened marinade until cooked through.
  7. Serve with garnishes and side salad or slaw.

Notes

  • Chicken breast can be used, adjust cooking time to prevent overcooking.
