For the Fajitas:
- 2 large chicken breasts, sliced thinly
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 tablespoon vegetable oil (optional)
- 3 tablespoons fajita seasoning
- 1/4 cup (60 ml) water
Instructions
- Preparation: Place all of the ingredients in the Instant Pot, ensuring the chicken and peppers are well coated in the spices.
- Cooking: Seal the lid, set the Instant Pot to manual or pressure cook on high for 4 minutes. Perform a quick release once done.
- Serving: Serve the fajita mixture on warmed tortillas with toppings like pico de gallo, avocado, cilantro, and lime or lemon juice.
Notes
- For a freezer meal, slice the chicken and veggies, season, and freeze for up to 3 months.
- If you prefer crunchy peppers, add them after pressure cooking and steam for a few minutes.
- For frozen chicken, adjust cooking time to 7 minutes and add peppers after cooking to avoid mushiness.
