- 1/2 teaspoon dried tarragon or other herbs
- 1/2 cup Spam or other cooked meat, diced
- 1/2 cup cheddar cheese or mozzarella, or your favorite cheese blend
- 1 handful of baby spinach or spring mix
Instructions
- Heat olive oil in a large frying pan over medium-high heat.
- Pour eggs into the pan and cook until starting to solidify.
- Add spinach to one side, fold over, and top with preferred toppings.
- Serve and enjoy!
