Description

Potato Mixture:

  • 3 lbs Yukon Gold potatoes, or red skinned potatoes
  • 34 cloves garlic, sliced thick
  • 5 Tbsp unsalted butter
  • 1/4 cup milk
  • 2 Tbsp Parmesan cheese, grated
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • salt and pepper

Toppings:

  • 4 oz fresh mozzarella cheese, sliced

Instructions

  1. Preheat oven and prepare dish: Preheat oven to 400°F. Butter or coat a 9″ pie dish with cooking spray.
  2. Prepare potatoes: Peel and chunk potatoes, place in a pot with garlic, cover with water, boil until tender, then drain and mash with butter and milk.
  3. Assemble pie: Transfer mashed potatoes to the dish, top with Parmesan, mozzarella slices, basil, oregano, salt, and pepper.
  4. Bake: Bake for 30 minutes until cheese is golden and bubbly. Let sit before serving.

Notes

  • Fresh mozzarella may need extra salt, so adjust seasoning accordingly.
