Potato Mixture:
- 3 lbs Yukon Gold potatoes, or red skinned potatoes
- 3 – 4 cloves garlic, sliced thick
- 5 Tbsp unsalted butter
- 1/4 cup milk
- 2 Tbsp Parmesan cheese, grated
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- salt and pepper
Toppings:
- 4 oz fresh mozzarella cheese, sliced
Instructions
- Preheat oven and prepare dish: Preheat oven to 400°F. Butter or coat a 9″ pie dish with cooking spray.
- Prepare potatoes: Peel and chunk potatoes, place in a pot with garlic, cover with water, boil until tender, then drain and mash with butter and milk.
- Assemble pie: Transfer mashed potatoes to the dish, top with Parmesan, mozzarella slices, basil, oregano, salt, and pepper.
- Bake: Bake for 30 minutes until cheese is golden and bubbly. Let sit before serving.
Notes
- Fresh mozzarella may need extra salt, so adjust seasoning accordingly.
