Chicken:

  • 4 boneless skinless chicken breasts (or thighs)
  • Salt and pepper

Sauce:

  • 1 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon minced garlic
  • 1/2 teaspoon red pepper flakes (or more to taste)

Other:

  • 1 tablespoon olive oil
  • 1/3 cup finely diced shallots (or red onions)
  • 2 tablespoons salted butter
  • 1/4 cup heavy cream
  • 2 tablespoons chopped parsley or basil
  • Prepared broccolini, for serving

Instructions

  1. Pound and Season Chicken: Pound down the chicken breasts/thighs to ½ inch thickness and season with salt and pepper.
  2. Prepare Sauce: In a measuring cup, combine chicken broth, lemon juice, garlic, and red pepper flakes.
  3. Preheat Oven: Preheat oven to 375ºF.
  4. Brown Chicken: Brown chicken in a skillet, then remove to a plate.
  5. Cook Sauce: Cook shallots with chicken broth mixture. Simmer until sauce reduces to about ⅓ cup.
  6. Thicken Sauce: Remove from heat, add butter, and then heavy cream. Return to heat briefly without boiling.
  7. Finish Dish: Place chicken back in the skillet, drizzle sauce over it, and bake for 5-8 minutes.
  8. Serve: Top with herbs and serve warm with lemon slices and side dish.
