Potato Mixture:
- 6–7 russet potatoes (about 800g)
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 3 tbsp potato starch (substitute with cornstarch)
Filling:
- 4–6 onion rings, sliced into 1-inch thick rings
- 4–6 oz block of mozzarella cheese (substitute with pre-sliced cheese)
Dredge:
- 1/2 cup potato starch (substitute with cornstarch)
- 1/2 tsp garlic powder
- 1/4 tsp salt
Egg Wash:
- 2 eggs
- 1/4 tsp salt
Breading:
- 3/4 cup panko bread crumbs
- 1/4 tsp salt
Instructions
- Prepare Potatoes: Peel and chop potatoes, steam until fork-tender or microwave. Mash with salt, pepper, and starch.
- Prepare Onions: Cut into rings. Cut mozzarella into slices.
- Assemble Donuts: Fill onion rings with cheese and mashed potatoes.
- Heat Oil: Heat oil to 375F (190C).
- Prepare Coating: Dredge donuts in starch mix, egg wash, then breadcrumbs.
- Fry: Fry donuts until golden brown, about 2-3 minutes per side.
- Serve: Allow to cool slightly on a wire rack.
Notes
- Be careful when frying the donuts as they can be heavy – use a spatula for ease.
- Experiment with different cheeses for varied flavors.
