Bread Toast:

  • 2 slices of Bread – white, multi-grain, whole wheat, etc.

Roast Beef:

  • 6 Slices of Roast Beef, slow-cooked

Cheese:

  • 4 slices Provolone cheese or Mozzarella

Filling:

  • 1/2 tbsp. Olive Oil
  • 1 tbsp. Onion, yellow or red, diced
  • 1 tbsp. Bell Pepper, diced (green and red work well)
  • 2 Mushrooms
  • Pinch of Salt, ground black pepper, and red chili flakes

Spread:

  • 1/2 tbsp. Mayo (Olive oil, regular, etc.)
  • 1/2 tbsp. Sriracha or any other hot sauce

Instructions

  1. Sauté Vegetables: Add onion, bell peppers, mushrooms, salt, pepper, and chili flakes to a pan. Sauté for 4-5 minutes on medium-high heat. Drain on a paper towel.
  2. Toast Bread: Melt butter in a pan, toast bread slices on low heat.
  3. Prepare Spread: Mix mayo and Sriracha, spread on toast slices.
  4. Assemble: Place cheese, roast beef, sautéed vegetables on one toast slice. Top with the other slice.
  5. Toast Sandwich: Toast on low heat, flipping occasionally until cheese melts.

Notes

  • Transfer sautéed vegetables to a paper towel to avoid sogginess.
