Instructions

  1. Brown the Meats: In a large skillet over medium-high heat, brown the ground beef and hot breakfast sausage together. Crumble the mixture evenly and drain off excess fat. Transfer the browned meat to the slow cooker.
  2. Prepare Carrot Pumpkins: Slice the carrots and then carefully cut two straight slits at the top for the stem. Remove two small triangle segments from each side of the stem to form a pumpkin shape. Add these shaped carrot slices to the slow cooker.
  3. Add Vegetables and Seasonings: Add the diced gold potatoes, diced celery, diced leeks, minced garlic, Italian herb seasoning, salt, pepper, condensed French onion soup, condensed tomato soup, water, and beef broth into the slow cooker. Stir gently to combine all ingredients.
  4. Cook the Stew: Cover the slow cooker with its lid. Cook the stew on HIGH for 4 hours, or LOW for 8 hours, allowing the flavors to meld and the vegetables to soften.
  5. Carve Skull Mushrooms: When cooking time is nearly complete, prepare the mushrooms. Cut each mushroom in half lengthwise. Use a straw to poke out holes for eyes and a knife to make two small slits for the nose. Additional slits can be made to resemble a skull’s features.
