For the Soup:
- 1 tablespoon oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1–2 teaspoons chilli
- 1/2 teaspoon turmeric
- 1/2 teaspoon ginger
- 600 grams carrots, sliced
- 150 grams red lentils
- 1.5 litres vegetable stock
- 1 handful fresh coriander, chopped
Instructions
- Sauté Onion and Garlic: Heat oil in a pot over medium heat. Sauté the onion until soft, about 5-7 minutes. Add garlic and sauté for 1 more minute.
- Add Spices: Stir in coriander, cumin, chilli, turmeric, and ginger. Cook for 1 minute.
- Cook Soup: Add carrots, lentils, and vegetable stock. Simmer for 25 minutes until tender.
- Blend Soup: Use a hand blender to puree the soup until smooth.
- Finish Soup: Stir in chopped coriander. Season with salt and pepper to taste.
- Serve: Garnish with desired toppings and serve hot.
