Wet Batter

Dry Mix
- 2 cups flour
- 2 tbsp gochugaru
- 1 tbsp paprika

- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp sugar
Spicy Creamy Sauce
- 2 tbsp Japanese mayo
- 1 tbsp sweet chili sauce
- 1 tbsp Sriracha
- 1/2 tbsp light soy sauce
- 1/2 tbsp rice vinegar or white vinegar
- 1/2 tbsp chili flakes

Instructions
- Chicken Marinade: Mix egg whites, flour, gochugaru, paprika, garlic powder, salt, and sugar to create a wet marinade. Coat the chicken thighs thoroughly with this mixture and marinate in the refrigerator for at least 1 hour for maximum flavor.
- Dry Mix: In a large bowl, combine the flour, gochugaru, paprika, garlic powder, optional onion powder, baking powder, salt, and sugar. Mix well and set aside.
- Spicy Sauce: In a small bowl, whisk together Japanese mayo, sweet chili sauce, Sriracha, soy sauce, rice vinegar, and chili flakes until smooth. Set aside.
- Dredging: Prepare another bowl with water (ice cold). Remove chicken from marinade, coat with dry mix, dip in water, then coat again with dry mix for extra crunch.
- Deep Frying: Heat oil in a deep-fryer or heavy-bottomed pot to 350°F (175°C). Fry the coated chicken thighs in batches until golden brown and cooked through, about 8-10 minutes. Drain on paper towels.
- Assembling: Toast burger buns lightly. Spread spicy sauce on the bottom bun, add lettuce, a slice of cheese, fried chicken, and the top bun. Serve immediately for best crunch and flavor.
Notes
- Depending on the size of your burger bun and chicken thigh, you may want to cut the chicken thigh in half before marinating to fit the burger bun.
- You can substitute gochugaru with chili powder or any other spicy seasoning.
