Description

This Spicy Watermelon Vegan Sushi is a refreshing twist on traditional sushi, with a burst of sweet, spicy flavors wrapped in nori and sushi rice. Perfect for a light and flavorful meal or snack.

Ingredients

Units Scale

For the spicy watermelon:

  • 1 tablespoon vegan mayonnaise
  • 1 teaspoon Sriracha
  • 1 teaspoon soy sauce
  • 1 teaspoon white miso paste
  • 1/2 teaspoon sesame oil
  • 1 1/2 cups watermelon, finely chopped

To make sushi rolls:

  • 4 nori sheets (or more if needed)
  • 1 recipe prepared sushi rice
  • Sesame seeds for garnish

Instructions

  1. Prepare the spicy watermelon: In a medium bowl, mix together vegan mayonnaise, Sriracha, soy sauce, white miso paste, and sesame oil. Add in the finely chopped watermelon and toss to combine.
  2. Assemble the sushi rolls: Spread prepared sushi rice on a nori sheet, leaving 2 inches of exposed nori. Fill with the spicy watermelon and sesame seeds. Roll up the sushi, seal with water, and cut into rounds.
  3. Serve: Enjoy your Spicy Watermelon Vegan Sushi rolls with a side of soy sauce and pickled ginger.

Notes

  • This sushi is also delicious when served in a Buddha bowl style with rice, nori seaweed snack, avocado, green onions, and cucumber slices for a fresh and satisfying meal.
