Description

A hearty and flavorful pot roast recipe featuring tender chuck roast cooked to perfection with a rich blue cheese gravy, served alongside potatoes and onions for a comforting meal.

Ingredients

Units Scale

Meat and Vegetables

  • 34 pound chuck roast
  • 1 yellow onion, halved and thinly sliced
  • 8 small Yukon gold potatoes
  • 6 sprigs fresh thyme

Cooking Liquids and Seasonings

  • 2 tablespoons vegetable oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • Extra thyme sprigs for flavor

Blue Cheese Gravy

  • 1/2 cup blue cheese, crumbled
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven: Preheat your oven to 325 degrees Fahrenheit to prepare for braising the roast.
  2. Season the meat: Generously season the chuck roast with kosher salt, black pepper, and thyme to infuse it with flavor.
  3. Sear the roast: In a large skillet or oven-safe Dutch oven, heat vegetable oil until hot. Add the beef and brown deeply for 4-5 minutes on each side to develop a rich crust.
  4. Add vegetables and liquids: Surround the roast with sliced onions and potatoes. Mix beef broth, Worcestershire sauce, and additional thyme sprigs, then pour over the roast and vegetables.
  5. Bake covered: Cover the pot with a lid or foil and place it on the center rack of the preheated oven. Cook for 3 to 3.5 hours until the meat is tender and falls apart easily.
  6. Prepare blue cheese gravy: Remove the roast and set aside. Remove thyme sprigs. In the same pot, add heavy cream and blue cheese crumbles, whisking over medium-high heat for 6-8 minutes until thickened.
  7. Combine and serve: Shred the beef into large chunks and return to the gravy. Serve hot, with potatoes broken in half and covered with blue cheese gravy, sprinkled with remaining blue cheese crumbles.

Notes

  • Use a heavy-duty Dutch oven for even heat distribution during baking.
  • Adjust cooking time based on the size of your roast; larger roasts may require longer braising.
  • Let the meat rest for 10 minutes before slicing for optimal tenderness.
  • This dish pairs well with crusty bread or a simple green salad.
  • Blue cheese can be substituted with gorgonzola for a milder flavor.
