Description

These refreshing Strawberry Lemonade Popsicles are a delightful treat, perfect for a hot summer day. Made with fresh strawberries, zesty lemon juice, and a touch of sweetness, these popsicles are not only delicious but also vegan and paleo-friendly.


Ingredients

For the Popsicles:

  • 3 1/2 cups fresh or frozen strawberries (thawed, if frozen)
  • 1/4 cup fresh lemon juice (from 2 lemons)
  • 23 Tbsp. honey or agave (adjust, to taste)
  • 3/4 cup water, to blend

Instructions

  1. Place ingredients in Blender: Place strawberries, lemon juice, 2 Tbsp. honey, and water in a blender.
  2. Puree: Puree the ingredients until smooth.
  3. Adjust Sweetness: Taste and add additional lemon juice or honey, as desired.
  4. Pour into Molds: Pour the mixture into popsicle molds using a funnel.
  5. Insert Sticks and Freeze: Cover with a lid, insert popsicle sticks, and freeze for 3-4 hours until solid.

Notes

  • If you don’t have popsicle molds, you can use paper cups and popsicle sticks or straws as an alternative.
  • To remove popsicles from the mold easily, run a little cold water on the outside of the mold and gently wiggle the sticks to loosen them.
  • Leftover popsicles can be stored in a freezer bag in the refrigerator for 1-2 weeks.
