Cucumbers:
- 6 cups sliced cucumbers (about 3 medium cucumbers)
Red Onion:
- 1 cup red onion thinly sliced
Pickling Mixture:
- 3 teaspoons salt
- 1 1/4 cup apple cider vinegar
- 1 cup water
- 5 tablespoons honey
- 1 teaspoon minced garlic
- 1/2 teaspoon crushed red pepper
Instructions
- Prepare Cucumbers and Onions: Remove and discard ends of cucumbers. Slice cucumbers and onions. Sprinkle with salt and let sit for 1 hour to remove moisture.
- Make Pickling Mixture: In a saucepan, combine vinegar, water, honey, garlic, and red pepper. Boil for 1 minute, then cool.
- Assemble Pickles: Rinse cucumbers and onions. Place in jars and pour pickling liquid over. Refrigerate for at least 3 hours before serving.
Notes
- You can use any vinegar, but apple cider vinegar adds a sweet flavor.
- Adjust honey for desired sweetness level.
- Recipe fits a 46oz jar or 2-32oz jars. Increase liquid for smaller jars.
