Spaghetti

  • 8 ounces spaghetti

Tomato Sauce

  • 1/4 cup olive oil
  • 2 pints cherry tomatoes
  • 3 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed red pepper
  • 1/2 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta until al dente, then drain and reserve ½ cup pasta water.
  2. Prepare the Tomato Sauce: Heat olive oil in a skillet. Cook cherry tomatoes until softened, then add garlic, salt, and crushed red pepper. Mash tomatoes and cook until saucy.
  3. Combine and Serve: Toss drained pasta with tomato sauce, basil, and Parmesan. Add reserved pasta water as needed. Serve with extra basil and Parmesan.

Notes

  • Leftovers can be stored in the fridge for 4-5 days.
  • The sauce can be made ahead and refrigerated for 2-3 days.
