Spaghetti
- 8 ounces spaghetti
Tomato Sauce
- 1/4 cup olive oil
- 2 pints cherry tomatoes
- 3 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon crushed red pepper
- 1/2 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta until al dente, then drain and reserve ½ cup pasta water.
- Prepare the Tomato Sauce: Heat olive oil in a skillet. Cook cherry tomatoes until softened, then add garlic, salt, and crushed red pepper. Mash tomatoes and cook until saucy.
- Combine and Serve: Toss drained pasta with tomato sauce, basil, and Parmesan. Add reserved pasta water as needed. Serve with extra basil and Parmesan.
Notes
- Leftovers can be stored in the fridge for 4-5 days.
- The sauce can be made ahead and refrigerated for 2-3 days.
- Substitute pasta or tomatoes as desired.
