Description

These crispy Zucchini Fries are a delicious and healthy alternative to traditional fries. With just four simple ingredients, they are easy to make and perfect for a snack or side dish.

Zucchini Fries:

  • 2 large zucchini
  • 2 large eggs
  • 2 cups panko bread crumbs
  • 1/2 cup parmesan cheese finely grated
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat the oven: Preheat the oven to 200C/400F. Line a large baking sheet with parchment paper and set aside.
  2. Slice the zucchini: Slice zucchini into thin matchsticks. Whisk eggs in a bowl. In a separate bowl, combine breadcrumbs, parmesan cheese, salt, and pepper.
  3. Coat the zucchini: Dip zucchini in the egg, then coat with breadcrumb mixture. Place on the lined sheet. Repeat for all zucchini.
  4. Bake the fries: Bake for 22-25 minutes, turning occasionally for crispiness. Serve hot.

Notes
